Hillcrest Distillery is a small family-run distillery established in 2020, driven by the passion and inspiration gained from experiences in Tasmania and Scotland. Brothers James and Ed spent over a decade envisioning their own distillery, which became a reality with the addition of sales and marketing expert Jessica. Their goal is to create exceptional spirits using traditional techniques and the finest ingredients, including pure filtered rainwater, fresh local citrus, Australian-grown malts, cereals, and botanicals, as well as premium ingredients from around the world.
