Noble Bootleggers Distilling Co is a family-owned and operated distillery and regenerative farm located near Bendigo, Victoria. Founded by Dan and Kristin Lemura, who have extensive experience in the hospitality industry, the distillery began its journey while they owned The Noble Experiment Melbourne.
Their fascination with barrel aging cocktails, spirits, and liqueurs led them to create unique offerings for their bar guests. When customers expressed a desire to take these creations home, they decided to apply for an excise license, leading to the birth of Noble Bootleggers Distilling Co.
Initially operating from their home in Wyndham Vale, they eventually moved to their forever home in Longlea in early 2020, where they have 23 acres of countryside to grow their own produce and live sustainably. Sustainability is a core value for the distillery, with spent botanicals repurposed to create fragrances and composted to feed their worm farm, which helps regenerate the soil.
Kris, with her background in sustainability and a Masters in Sustainable Regional Development, continues her research in introducing the circular economy to the craft distilling industry. The couple’s passion for sustainability, distilling, and regenerative farming forms the foundation of Noble Bootleggers Distilling Co’s exciting journey, with much more to come in the future.
