Danielle Costley, the founder of the distillery, is an internationally acclaimed wine, food, and travel writer with a deep passion for fine wines. During her winemaking studies, she developed a fascination for distillation, especially barrel-aged spirits. She acquired rare Ice Chardonnay barrels from Fraser Gallop Estate and began experimenting with gin and whisky.
While working on her book, Beyond the Farm Gate, Danielle discovered native botanicals that captured the essence of Western Australia’s South West region. Infusing these botanicals in barrel-aged gins, she collaborated with chefs to explore the versatility of the regional produce.
The spirits from the distillery aim to evoke images of the unique South West region of Western Australia, overflowing with local produce. By ageing their spirits in rare Chardonnay barrels, they pay homage to the magnificent Margaret River wine region where they are located.
In 2020, they released Australia’s first Ice Whisky, and the Cane Cut Semillon single malt whisky is set to be released in 2022. The distillery invites everyone to join their journey, one swirl, sip, or dram at a time.
