That Spirited Lot Distillers, located in Seaford near Melbourne, is the brainchild of brothers Jon-Paul and Chris Willigenburg, along with sisters Sarah and Kate Barton. It all started as a wild idea in 2016, driven by their passion for tastes, flavors, and distilling. In 2018, their dream took a significant step forward with the arrival of a 200L copper still named Doris, after their late grandmother.
Specializing in high-quality pot & column distilled gins & vodkas crafted from Australian grape spirit, the distillery also has a whiskey program in development. Their first product, Ninch Dry Gin, was launched in May 2019, paying tribute to the Mornington Peninsula where the brothers grew up. Their dedication to excellence is reflected in numerous medals won locally and internationally.
With a hands-on approach to production, the team takes no shortcuts and constantly tastes their spirit to ensure the highest standards. Sustainability is a core focus, and they implement environmentally friendly practices and waste management. Solar power supports their building, and leftover fruit and botanic materials are used to create mixer syrups and tonic syrups, promoting waste reduction and supporting home mixologists in crafting delightful cocktails.
